First let me start by saying, last week was hard for me. I had a physically, emotionally, and stressful last part of the week. On Friday i thought about calling Paige, my trainer and telling her i was not going to be able to work out. I got off work and really just wanted to come straight home. I went to the gym, changed and got ready for my workout, really unmotivated and not wanting to be there. but when Paige got there i told her i was having a really bad day and i think she could see it in my eyes. We started the workout and i must say, i was so glad i didn't miss it. Friday's workout is just what i needed to get over the emotional stress i was dealing with that day. I felt great after that work out. I know there will be more times that i may get that way but i have my mindset that unless i am sick I WILL BE AT THE GYM.
Saturday was the Race for the Cure. I have to thank my daughter, Megan who attended with me. She walked the whole way with me and supported me the whole 5K. It was great to have my fellow participants walk with me. Also my trainer showed up before the race for some support, I really appreciated that. She is amazing. She also called me to see if i finished it. She is so motivating. Love you Paige. Also i have to tell my coworker/friend Stefanie that I love you guts, and you are amazing. Stefanie ran the 5k, and kept texting me to see my location, i was figuring she was at the finish line waiting for me. Then i got a text telling me to let her know when i crossed the bridge, and there she was, waiting for me. Stefanie walked back to meet me to walk to the finish line wiht me. That meant so much to me. Thanks Stef.
I got home from the race feeling ok. I started to get sick later saturday nite. I am home sick today and i am hoping to feel better to be able to work out a little bit tonite with Paige.
i told my fellow participants about a recipe called Cola Chicken. I used chicken and shrimp on separate occasions. Here is the recipe:

3 chicken breasts ( i cut my chicken into bite size pieces.)
1 can (12 oz) diet cola
1 cup ketchup i added a dash of hot sauce
Put chicken in a non-stick skillet.
Pour ketchup and diet cola (any kind) over the top.
Bring to a boil. Cover, reduce heat cook for 45 minutes.
Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken. Be sure to watch it during this last step.

Salsa Chicken
Ingredients

4 boneless skinless chicken breast - 5 oz each
Taco seasoning - about 1/2 pkg
1 cup salsa
1 cup shredded cheddar/jack cheese
Directions
Season chicken with taco seasoning, place in baking dish.
Pour Salsa on top of chicken.
Bake 30-40 min.
Sprinkle with cheese and bake until cheese is melted.
Can be served with sour cream on top--not included in calories. ( i used the low-fat sour cream)
